Conclave, Italian whisky by Poli Distillerie

Conclave

Conclave, from the Latin con “with” and clavis "key", "locked room".
It is the chamber where the cardinals of the catholic Church gather when electing the new pope, locked with a key.
Just like the barrels where our whiskies age for long years.

Conclave is a whisky obtained from pure peated and unpeated barley malt, distilled separately.
The new make spirits thus obtained rest in medium toasted white oak barrels, used and reconditioned, in order to extract only the softest tannins from the pores of the wood.

After five years of ageing, the individual barrels are joined together, to obtain a whisky with a unique character.
